IYO Omakase counter faithfully reproduces Edomae-zushi tradition, a set of rituals that identifies sushi in the Edo style, the ancient name of today’s Tokyo. A meticulous ritual, rigorously following principles such as seasonality, a daily selection of the finest fish available, the attention to rice cooking and seasoning that cannot be considered just a mere complement.
Taking one of the few seats available is an invitation to admire sushi master Masashi Suzuki skills closely while he masterfully prepares dishes in front of the guests. In the omakase menu, the nigiri are served following a progressive taste journey through oiliness and umami. It’s a parade of tasty dishes, interspersing express sushi with sashimi and authentic Japanese cooked delicacies, either steamed or grilled on a sumibiyaki grill.
